Rojo Sauce

This condiment mixes fresh tomatoes with jarred roasted peppers, plenty of garlic, and tangy balsamic vinegar. It tastes like bruschetta in a jar, and we are fine with that. It goes well with lots of dishes but we especially enjoy it with baked or sautéed fish, ladled on top of grains, or even blended as a dip.

  1. Step 1

    Chop up the peppers and tomatoes, and mince the garlic. Put in a medium bowl and add all other ingredients.

  2. Step 2

    Season to taste and enjoy! If you have a blender or food processor, you can skip the chopping and blend the ingredients to make a dip – you may need to add a little extra olive oil until it is smooth.

  3. Step 3

    This sauce will last in an air tight container in the refrigerator for about five days.
