Step 1
Start with the salad greens and add each new vegetable as you chop it, tasting as you go.

In a separate bowl, make the dressing: whisk all ingredients except for oil until combined. Slowly whisk in oil to emulsify. Taste and adjust seasonings as you see fit.

Toss the salad with the dressing just before serving. If your dressing didn’t emulsify, just stir or shake it up right before adding to the salad.

Consider this recipe more of a suggestion and less of an exact recipe – is fennel out of season and expensive? Leave it out, try adding another vegetable in its place. Want crunch? Add some toasted nuts or seeds. Play around and have fun – salad doesn’t have to be boring!
