Hands on Time
Cook rice as directed on package, in rice cooker if you have one (in any pot with a lid if you don’t).
While rice is cooking, prepare all other ingredients and combine them in a small saucepan over low heat, and whisk until smooth. Stir until the sauce begins to thicken, adding a little water if you’d prefer a thinner consistency.
When the rice has finished, stir in the vegetable mixture. Top with cilantro and enjoy!
