Coconut Rice

We make this dish in our workshops, and participants are often puzzled by the ingredient list: Tamari, maple syrup, and "sun" butter? But they are always pleased with the end result! Not only is this dish different and delicious, it is also gluten, nut, meat, dairy and egg-free. Great if you are trying to feed a group with dietary restrictions. Goes very well with braised beef, if you're serving meat-eaters.

  1. Step 1

    Cook rice as directed on package, in rice cooker if you have one (in any pot with a lid if you don’t).

  2. Step 2

    While rice is cooking, prepare all other ingredients and combine them in a small saucepan over low heat, and whisk until smooth.¬†¬†Stir until the sauce begins to thicken, adding a little water if you’d prefer a thinner consistency.

  3. Step 3

    When the rice has finished, stir in the vegetable mixture. Top with cilantro and enjoy!
