Make the dressing: Put the tahini in a bowl and slowly add the water, whisking as you go. It will seize up momentarily and then relax. Add the remaining ingredients and whisk together. Thin out with more water if desired.
Put kale it in a large bowl and sprinkle lightly with salt, which will draw out moisture and soften the kale. Squish the kale and salt together with your hands until it breaks down slightly.
Add the remaining vegetables to the large bowl, drizzle with the dressing, toss gently a few times, and serve immediately.
