Hands on Time
Heat a medium skillet (cast iron, ceramic, stainless, or non-stick) over medium high heat. Add 1/2 Tablespoon of oil or butter.
Add beans, salsa, spinach, salt, and pepper. Stir until spinach is beginning to wilt and beans are heated through.
Move the beans and spinach to one side of the pan, and add the additional 1/2 Tablespoon of oil or butter to the empty side. Crack the eggs onto the empty side of the pan and season with salt and pepper.
Scramble the eggs as they cook, eventually adding the spinach and salsa to the egg mixture. Continue to scramble until eggs are cooked to your liking.
Top with a dollop of yogurt and enjoy!
